Cheeseburger Cups

Who doesn’t love a good cheeseburger? I know I do, especially with all the right toppings! Unfortunately, for many of us, it’s too chilly to fire up the grill right now. So, when I found this recipe from Buzzfeed Tasty for Cheeseburger Cups, I had to try it…

My cousin is always down for trying new stuff in the kitchen, so we went to Kroger, grabbed the ingredients and took over our grandma’s kitchen. Nobody was complaining though, since they got to eat the results!

RECIPE:

– 8 refrigerated biscuits
– 1 lb. ground beef
– 1/2 cup ketchup
– 1 tsp Worcestershire
– 1 Tbsp. mustard
– 2 Tbsp. brown sugar
– 8 small slices of cheese
– Toppings of your choice.

Crumble and cook the beef in a skillet. Drain. Mix in ketchup, Worcestershire, mustard, and brown sugar. Grease a muffin tin, and line 8 cups with the refrigerated biscuits. Divide the meat mixture among the 8 cups, and bake at 400°F/204°C for 10-15 minutes, until the biscuit dough is brown. Top with cheese and bake an additional 5 minutes.

We doubled the recipe since these were dinner for most of our family. Though, everyone was full after eating two or three. Also, it’s best to not get the jumbo biscuits, unless you want to split them in half. My cousin and I used them, but we couldn’t fit as much meat. When I made them at home the following week, hubby and I downsized to the regular-sized biscuits, and they were fine, even with our tiny muffin tins.

After your cheeseburger cups have cooled for a few minutes, pop them out and add your favorite cheeseburger toppings: lettuce, tomatoes, pickles, or even some extra ketchup and mustard!

I think this makes a great at-home date night meal, because it’s easiest with two people in the kitchen. One can focus on browning the meat and adding all the ingredients, while the other stretches out the biscuits for the muffin tin. These two steps are usually done around the same time when there are two cooks.

*BONUS* If you like sloppy joes in your house, this is a great option! My husband thought the meat mixture was a little sweet for sloppy joes, but that’s just a matter of how much brown sugar you put in there. It’s so easy to adjust accordingly, and most of us already have these ingredients available. So, it’s no big deal if you forget the can of Manwich!
