Whenever I have some free time, I love to scroll through the pages of Pinterest and look for new recipes to try. It’s where I look for meals to make using ingredients I already have on hand when making weekly meal plans. Last week, I had some ground turkey left over so I searched for a healthy dish to make with it. That’s how I found these Slow-Cooker Stuffed Peppers from (pardon the name) Damn Delicious. They sounded, well, delicious, so I decided to try my hand at them. Here’s my adapted recipe.
To make four servings, you will need:
- 4 large bell peppers (I like the green ones but any color will work.)
- ½ lb of ground turkey (I used 93% lean.)
- ½ cup cooked brown rice (follow package directions)
- 1 cup shredded cheddar cheese
- 1-15 oz. can black beans, drained and rinsed
- 1 can whole kernel corn
- ½ cup salsa (I recommend something with a little spice to it, for added flavor.)
- ½ cup green onion, finely chopped
- 1 tsp. cumin
- 1 tsp. chili powder
- salt and pepper, to taste
- additional toppings: hot sauce, extra cheese, sour cream, fresh avocado, etc.
Start by cooking your rice, since that takes the longest. Cook until all of the water is absorbed (approximately 45 minutes) and it looks like this.
While you’re waiting for the rice to finish, prepare the bell peppers. Cut the tops off and remove all of the ribbing and seeds. This will create four perfect cavities for your “stuffing.”
When the rice is done, add it and all of the other ingredients to a large bowl and mix them together.
Take the stuffing and fill each pepper with as much of the stuffing as you can.
Spray the bottom of your slow-cooker with some non-stick canola oil and add the stuffed bell peppers. Cook on LOW for 6 hours, or HIGH for 3, until the peppers are tender. The should ensure the meat is cooked properly, too.
How easy is that?! Serve the peppers warm with any additional toppings you’d like. Ryan and I went with extra cheese and sour cream. Yum!
These peppers are a tad on the messy side. After serving them up on plates, we had to go back for bowls!! Juices will run when you cut into these beauties, so beware. 🙂 They may not look like it, but these peppers are very filling and packed with protein! It’s an easy-to-prepare meal that tastes delicious. ENJOY!!
